Time: 5 minutes Servings: 4-6 pancakes (depends on size)
Like most moms, I try to keep my toddler eating pretty clean most of the time. We've recently discovered this simple, 5-minute rendition of pancakes that she's literally obsessed with. And mama loves them too because it's so darn quick and easy!
What you need to make this:
1 large banana
2 eggs
1/4 unsweetened coconut yogurt (any yogurt will work)
1 tsp vanilla extract
Blueberries (optional)
1 tbsp coconut oil for cooking
Pure maple syrup, more berries, and a sprinkle of hemp or chia seeds for serving (optional)
What to do to make this:
Mash your banana in a bowl with a fork or potato masher
Crack 2 eggs into the bowl, add vanilla extract and whisk until smooth. Add berries into your batter now if you're using them.
Heat coconut oil in a pan on med-low
When your oil is hot, pour batter to make a few small pancakes (we like them thin!)
Cook pancakes on med-low for about 2 mins per side and enjoy! These last great in the fridge for up to 3 days or you can freeze them for up to 1 month.
