If you haven't tried green goddess dressing yet, you haven't lived! This stuff is so unbelievably yummy, packed full of all the green goodness and incredibly versatile. We use it on everything! Burgers, sandwiches, wraps, pasta, chilli - but may favourite is as the dressing in this green goddess roasted Buddha Bowl!
Guys, this bowl is flavour country! Browned to perfection oven roasted veggies, crunchy pickled kimchi for a hit of gut loving probiotics and shredded carrot, arranged beautifully on a bed of spinach and then blessed by a dollop of the mighty green goddess dressing. This dressing is anti-inflammatory and full of antioxidants, healthy fats and Omega 3s fatty acids, which are great for skin, heart and brain health. This bowl is literally packed with nourishment, yet so incredibly simple to make. I prep all my veggies on Sunday so I can take this and other Buddha bowls for lunch throughout out the week.
Here's what you'll need to make the bowl:
1 chopped full head of cauliflower
1 chopped full head of broccoli
2 sweet potatoes diced into pucks
1 carrot shredded
2 tbsp kimchi
Bed of spinach (you can 100% sub for arugula, spring mix OR quinoa or brown rice)
Pinch of radish sprouts for garnish
2 tbsp EVO
1 tsp cumin
1/2 tsp turmeric
Salt & pepper to taste
🌿Here's what you'll need to make the vegan green goddess dressing:🌿
1 cup packed parsley
1 cup packed cilantro
1 jalapeño deveined and seeded
1 avocado
2 cloves garlic
1/2 cup walnuts
Juice of 2 limes
1/4 cup EVO
1 tbsp nutritional yeast (optional)
Salt and pepper as desired
Here's what to do:
Preheat oven to 425F then chop your veggies. Add cauliflower to a large bowl with 1 tbsp of EVO and season with cumin, salt, pepper, turmeric.
Put broccoli and sweet potato pucks in another large bowl and season with the other tbsp of EVO and salt and pepper to taste.
Roast veggies on one pan for 35-45 mins until browned to your liking.
While veggies are roasting prep green goddess sauce: pulse all ingredients except walnuts in a food processor until preferred smoothness. Add walnuts and repeat. Use water or more oil to thin out if it gets to thick!
When your veggies are done, add as much as you like with shredded carrot and kimchi to a bed of spinach (or green of choice). Add a nice dollop of green goddess dressing on top. Garnish with radish or other sprouts for that gram worthy bowl and dig in!
