World's Easiest Black Bean Soup

Honestly, this soup is so easy to make that I almost expected it to have no flavour. But that is so far from the truth it's unreal. This soup is DELICIOUS and so simple to pull together! With a tiny hint of spice from 1/4 of a jalapeno, a smokiness from the fire roasted tomatoes and a freshness from the cilantro and lime juice garnish, this soup packs all the flavour alongside all the fiber from a whopping two cans of organic black beans. Your taste buds and your digestive track will thank you!




Here's what you need to make the soup:
  • 1L carton organic GF veggie broth

  • 2 cans organic black beans, rinsed well

  • 14 ounces organic fire roasted crushed or diced tomatoes (1/2 can of the brand shown below)

  • 1/2 red onion diced

  • 1/4-1/2 jalapeno, diced (depending how spicy you like it)

  • 2 carrots, diced

  • 1 stalk celery, diced

  • 2 tbsp EVO

  • 2 tbsp chilli powder

  • 1 tbsp cumin

  • 1/2 tbsp garlic powder

  • 1/2 tbsp each, S & P (or to taste)

  • 1 tsp cayenne pepper (optional)

  • Fresh cilantro and lime wedges for garnish

Here's what you need to do:
  1. Heat EVO on medium heat in a large soup pot. Dice carrots, onion, jalapeno and celery - then add to pot along with S & P.

  2. Let veg sweat until onions become translucent. Then add black beans, crushed tomatoes and spices. Heat for a few more mins before adding veggie broth.

  3. Add veggie broth and bring to a boil. Then reduce to low and simmer for 10 mins.

  4. Remove soup from heat and blend with an immersion blender or in a blender in batches.

  5. Garnish with fresh squeezed lime and fresh cilantro and enjoy!
