Brainfood: Coconut & Walnut Flaxseed Porridge

Updated: Jan 27, 2020

Often we don't think about the health of our brains the way we think about the health of our bodies. Maybe because we can't see our brains? Well, brain health is super important and you actually play a role in your own! Yup, the diet and lifestyle choices you make on a daily basis are either accelerating or slowing down the rate at which your brain ages. And since cases of alzheimer's are expected to triple in the next 25 years, you're going to want to take care of that brain of yours!

This breakfast is a great (very small) start! ;) It's a "brainfood" powerhouse that's loaded with antioxidants, protein, tons of fiber, omega 3 fatty acids. It's also heart healthy, energy boosting, great for digestion and full of healthy fat that is guaranteed to keep you full until lunch time. Not to mention, it couldn't be easier and quicker to whip up!

Here's what you need to make it: 1
  • 1/2 cup ground flaxseed

  • 1/2 cup full-fat coconut milk

  • 1/4 cup crumbled walnuts

  • 1/4 cup coconut chips

  • 1 tbsp hemp seeds (optional)

  • 1 tbsp chia seeds (optional)

  • Handful frozen or fresh blueberries or any other berries/nuts/seeds.

  • A small drizzle of pure maple syrup for added sweetness (optional)

Here's what you need to do:
  1. Add all ingredients to a small pot and heat on medium heat until warm.

  2. If you're using fresh berries and maple syrup, I prefer to add them at the end when the porridge is ready to eat.
