This dish is DEVINE! I feel like I'm in a villa on an Italian hillside every time I eat it. :P It's rich and uber salty, everything you want in an authentic Italian pasta dish. I say authentic because my Italian BFF's mom is the one who got me hooked on it many years ago - I just had to recreate a DF, GF version for myself.
Disclaimer: the one cheese I do enjoy once in awhile is wild buffalo, so there is some wild buffalo asiago sprinkled in the photo. If you can have cheese, go for it but trust me - it's delicious without.

What you need to make this dish:
1/4 cup vegan butter. I love this brand, which I feel is cleanest in terms of ingredients.
1/4 cup diced anchovies (I use jarred)
1/4 cup pasta water
1 clove of garlic, minced
Gluten-free pasta of your choice, cooked according to package
Red pepper flakes and pepper, to taste
What you need to do to make this dish:
Cook pasta according to package
Dice your anchovies and add them to a frying pan with your butter on low heat.
Add minced garlic and black pepper to your pan. Stir frequently on the lowest heat setting.
Reserve 1/4 cup pasta water before your drain pasta.
When pasta is done cooking, add it to your pan with sauce, add your red pepper flakes and a bit of pasta water until everything reaches a creamy and buttery consistency. Serve on a bed of fresh greens and enjoy!
