I know, I know... you're thinking gluten-free, dairy-free, grain-free? This can't taste good! But II assure you, this mac & cheese is delicious and it's made with Parmela Creamery- a clean vegan cheese brand made with just a few simple ingredients unlike a lot of the vegan cheese brands out there. It's toddler approved and super easy to make. I hope you love it as much as we do!
Here's what you need to make this dish:
1 package of cheddar Parmela Creamery vegan cheese (I get mine at Sobey's here in Canada)
1 box of Chickpea pasta (most major grocers in Canada sell)
1/4 cup or more organic canned coconut milk (I love Cha's Organic)
Salt, pepper & red pepper flakes (to taste)
A bed of fresh greens or micro greens for garnish (optional)
Here's what you need to do to make this dish:
Boil a large pot of water and cook pasta al dente according to the package.
When pasta is done cooking and drained, add it back to the pot with the full package of cheese and coconut milk.
Stir on low heat until all of the cheese melts. If it's too thick, add more coconut milk as needed.
Season with salt, pepper and red pepper flakes. Garnish with greens and enjoy!
