Super Seed Coconut Pudding

Makes: 3-5 servings Time: 2 mins (+ overnight to set in fridge)


This is my go to breakfast! It's super easy, filling and packed with wholesome plant-based nutrition, including ALL the fiber and Omega 3s you could ever ask for in a breakfast bowl. Just take a moment to prep it the night before, store in the fridge overnight and voila - you have yourself a nutritious breakfast that is ready to top with whatever toppings float your boat. Your poop's will thank you! ;)

What you need to make it:
  • 1/2 cup chia seeds

  • 2 Tbsp hemp seeds

  • 2 Tbsp flax seeds (ground or full seeds work)

  • 4 Tbsp shredded unsweetened coconut

  • 1 Tbsp maple syrup (Optional. I find it sweet enough from my berry toppings)

  • 2 cups non-dairy milk of choice (I use almond but cashew, oat, coconut would all work)

  • Toppings of choice, when ready to eat in the morning (My favourite are berries, pecans, walnuts, nut or seed butter, pumpkin or sesame seeds or coconut chips.)

What you need to do to make it:
  1. Pour 1/2 cup chia seeds into a container with lid

  2. Add all other dry ingredients

  3. Pour milk over everything and use a whisk to stir well.

  4. Put lid on container and set in fridge overnight. Top and enjoy in the morning!
