Makes 4-5 servings. Total time: 35 mins (plus 2 hours to press tofu in advance)
This bowl is a sweet and spicy delight! It's packed full of wholesome veggies and stars the sweet tropical vibes of mango or pineapple for added fibre, cancer cell fighting properties and a tons of wonderful digestive enzymes. A true superfood bowl IMO! It comes together easily in about 35 minutes, and leaves you with lots of delicious and nutritious leftovers to enjoy afterwards.
What you need to make the bowl:
1 block extra firm or firm non GMO tofu
1 tbsp Tapioca, arrowroot or cornstarch
1 ripe mango, peeled (could use pineapple chunks instead)
1 head of broccoli
½ head of cabbage
½ red & ½ yellow pepper or 1 of either
1 red or white onion
Any other veggies that tickle your fancy!
1 tbsp EVO or AVO
Green onions & sesame seeds to garnish
What you need to make the sauce:
½ cup 100% pineapple juice
¼ cup coconut aminos (or tamari)
2 tbsp maple syrup
3 cloves garlic, minced
1 tsp ginger, grated
1 tbsp chilli garlic sauce
1 tbsp tapioca (or other) starch
What to do to make it:
Press your tofu to drain water by placing it on a plate wrapped in a paper towel and one clean dish towel. Place a few heavy books on top of the tofu and leave for at least 2 hours.
When tofu is drained, chop into bite size pieces and toss in a bowl with 1 tbsp of your chosen starch.
Preheat the oven to 400 and arrange tofu bits on a baking sheet with parchment paper. Ensure pieces are not touching.
Bake tofu for 30 mins, turning every 10 mins until crispy on the outside.
While tofu cooks, chop your veggies and peel and dice your mango.
Steam your broccoli separately. While that steams, saute onion and cabbage in a large frying pan in EVO or AVO. When cabbage and onion are close to done, add peppers.
Make your sauce while your veggies and tofu cook by adding all ingredients except tapioca starch to a small pot. Heat on medium to bring to a boil. When boiling, slowly whisk in tapioca to avoid chunks and reduce to a low simmer. Sauce will thicken.
Add broccoli and tofu to your larger veggie pan, pour sauce over, garnish with sesame seeds and green onion and enjoy!
