Sweet & Savory Sausage, Fennel & Apple Fry

If you own a cast iron pan, this is a one dish wonder that's ready in no time using only a few simple ingredients. Organic pork sausage, fresh fennel, a few fennel seeds, some fresh arugula, a splash of apple cider vinegar and a few organic Granny Smith apples are all you need to create this beautiful meal.


I love using honey garlic flavoured sausage but have also used spicy or mild italian, which works well depending on your taste preference. Either way, this meal is the perfect balance of flavours. Rich fatty goodness from the sausage balanced with acidic and sweet; all finished with the perfect peppery bite from the arugula. A great gut friendly meal!


What you need to make this dish:
  • 1 tablespoon avocado oil (AVO)

  • 4 organic honey garlic or Italian sausages, pricked with a fork

  • 2-3 Granny Smith apples, peeled and thinly sliced

  • 1 bulb of fresh fennel (stalks removed), thinly sliced

  • 1 tbsp dried fennel seeds

  • 1 tablespoon apple cider vinegar

  • Salt and freshly ground pepper

  • 1-2 handfuls of fresh arugula for serving

  • Fresh sauerkraut for serving (for added gut health!)

What you need to do to make this dish:
  1. Heat the AVO in your cast iron on medium heat. Prick your whole sausages and add to pan to sear. You want them browned on the outside but not cooked entirely through (about 5 mins).

  2. Add dried fennel seeds to the pan and stir for 1 min to release flavour. Then add your apples fresh fennel, stirring occasionally, until everything is tender.

  3. I use a knife to cut up my sausages into bite size pieces at this point.

  4. Stir in the apple cider vinegar and season with salt and pepper. Add your arugula and remove from heat so it stays crisp. Enjoy with a side of fresh sauerkraut for added gut loving benefits! ;)
