Purple Sprouted Buckwheat Groats

Time: 3 mins Instant Pot (plus overnight soaking) OR 15 mins stove top Makes: 4-5 servings


Buckwheat groats:

Delicious!

Super nutritious!

Time is precious.

Nobody reads these intros so let's get on with the goods...am I right?! ;)


What you need:
  • Enough water to cover groats (for overnight soak)

  • 1 tbsp apple cider vinegar (for overnight soak)

  • 1 cup buckwheat groats

  • 1 1/2 cups of water (for cooking)

  • 1 tbsp coconut oil

  • 1/2 tsp sea salt

  • 1 cup mix of frozen blueberries/raspberries mix (optional but recommended)

  • Topping: Nuts, cinnamon, maple syrup or honey, seeds and fruits of choice (I love pecans, coconut chips, pumpkin and hemp seeds, and banana)

What you need to do:
  1. Soak groats overnight in a small bowl with enough water to cover them and 1 tbsp apple cider vinegar.

  2. The next morning, strain and rinse groats very well until water runs clear. Add groats to the instant pot with frozen berries, 1 tbsp of coconut oil, pinch of sea salt and water.

  3. Set instant pot to high pressure with valve on sealed position and set for 2 minutes cooking time. Let pressure release naturally when cooking is finished.

  4. Stir, serve and add toppings of choice.

If you don't have an instant pot and want to use the stove, add everything to a medium sized pot, bring to a boil and then simmer for 15 mins until groats are soft (but still a bit nutty).
